★ Stir Fried Bean Vermicelli

Been wanting to try documenting a dish from the ingredients to steps needed as I actually do not have a habit of measuring my ingredients beforehand when it comes to cooking. I recorded a quick video too as it would be much easier with visuals if one wanted to give it a try. This dish is something I have not had in a long while so here goes!

Soak the dried bean vermicelli in water for about 10 minutes for it to soften while in the meantime, you can start preparing your other ingredients like chopping up the garlic, onions, spring onions, coriander etc.

Mix 1 tbsp of fish sauce with 2 tbsp water or adjust the saltiness to your own preference and set aside. The diluted sauce makes it easier to distribute. Get ready crab meat, a beaten egg and bean sprouts.

When you are ready, heat up oil with chopped garlic and onions, then add in the beaten egg and give it a stir. I usually add in the rest of the ingredients before the egg is fully cooked so that the egg gets mixed with it too. After adding the drained vermicelli and bean sprouts, drizzle the diluted fish sauce over and along the side of the pan then mix in the rest of the crab meat, coriander and spring onions. Give it a quick good stir and finish off with pepper. Have it with some chilli padi too if you can take spicy.

This is a simple meal that can be done in less than 15 minutes. Enjoy!

Ingredients used in this recipe:

1 tbsp oil

1 tbsp chopped garlic

2 tbsp chopped onions

1 tbsp thai fish sauce

2 tbsp water

1 egg

125g crab meat

1 bundle of dried bean vermicelli

1/4 tsp white pepper

a handful of bean sprouts

1/2 stalk spring onions

some coriander leaves

chilli padi

I believe this dish could also go well with prawns or even shredded chicken instead of crab meat. Share with me your version on instagram if you do try!
